Spicy and Smokey Elote (Corn)

Learn how to make our delicious elote: grilled sweet corn smothered in a flavorful mixture of lime, chili, and crumbled cotija or feta cheese for the ultimate savoury and tangy treat.

Ingredients:

4x cobs of corn, peeled

2 tbsp mayonnaise/sour cream

2 tbsp Boom Spiced Chili Salt

Small handful of cilantro (chopped)

4 tbsp cotija or feta cheese, crumbled

4x lime wedges
Method:

Char the corn. We used a grill pan, but you could also do this on a grill, with a torch, in a broiler, or even directly on a gas stove. Don’t be shy here, some burnt bits will really improve the flavour.

Brush the mayonnaise or sour cream onto the corn so the remaining ingredients will stick. Sprinkle the Boom on top, and then add the cilantro and cheese.

Serve with the lime wedges.
