Glazed Salmon with Charred Kale

This easy salmon recipe is equal parts healthy and delicious and perfect to jazz up weeknight dinner! 

Serves 2

Prep time: 5 minutes

Cooking time: 15 minutes 

Ingredients: 

  • 2 pieces of salmon (skinned), approx 150g each. 
  • 1 bunch of kale
  • 1 tbsp cooking oil
  • ½ tsp salt
  • 2 tbsp Project Kari
  • 1 radish (thinly sliced)
  • 2 lemon wedges

Method: 

  1. Heat an oven proof pan over a high heat. While the pan heats, pick the kale. Sprinkle the salt over the kale and the salmon. Brush the Project Kari onto the salmon. 
  2. Add the oil to the pan, and then add the kale. When the kale is starting to char, place the salmon on top of the kale, and place under a preheated broiler. 
  3. Cook for 10 minutes, until the salmon is cooked through, and the top is just starting to char. 
  4. Serve with the radish and lemon wedges. This is great with rice, potatoes, pasta, or even cold as a packed lunch.
