Glazed Salmon with Charred Kale

This easy salmon recipe is equal parts healthy and delicious and perfect to jazz up weeknight dinner!
Serves 2
Prep time: 5 minutes
Cooking time: 15 minutes
Ingredients:
- 2 pieces of salmon (skinned), approx 150g each.
- 1 bunch of kale
- 1 tbsp cooking oil
- ½ tsp salt
- 2 tbsp Project Kari
- 1 radish (thinly sliced)
- 2 lemon wedges
Method:
- Heat an oven proof pan over a high heat. While the pan heats, pick the kale. Sprinkle the salt over the kale and the salmon. Brush the Project Kari onto the salmon.
- Add the oil to the pan, and then add the kale. When the kale is starting to char, place the salmon on top of the kale, and place under a preheated broiler.
- Cook for 10 minutes, until the salmon is cooked through, and the top is just starting to char.
- Serve with the radish and lemon wedges. This is great with rice, potatoes, pasta, or even cold as a packed lunch.
