Mala Calamari Spaghetti

  • 1 squid head (or approx 100g rings)
  • 200g dried spaghetti
  • 1 tsp cooking oil
  • Handful of salt
  • 4 tbsp Mala Savoury Chili Salt
  • 2 tbsp butter
  • 1 lemon
  • Small handful of chopped coriander


  1. Bring a pot of heavily salted water to a boil. Add the pasta, and cook to package instructions. 
  2. To prepare the squid, cut open so it lays flat, and score cut scores all the way along. Turn 90 degrees and repeat. Cut the scored squid into slices approx 1cm thick. 
  3. Heat a pan over a high heat, and when it’s very hot, add the oil. Add the calamari, and cook until for approx 30 seconds. Set aside until the pasta is cooked. When the pasta is ready, place back on the heat. 
  4. When hot, add the pasta, butter, and Mala, and stir together. Add pasta water a little at a time while stirring, until it forms a thick, creamy sauce that coats the pasta. Add some of the coriander, and place in a bowl. 
  5. To serve, add the remaining coriander, some lemon zest, and a lemon wedge.
