Roasted Potato Wedges with Garlic Mayo and Spicy Crèma

Crispy, spicy potato wedges with delicious, cool dips, this side makes an amazing snack, or compliments any main meal perfectly.

Method:

  1. Cut the potatoes into wedges.
  2. Bring to a boil in a pot of seasoned water until slightly undercooked, 5-10 minutes. 
  3. Lay out potatoes on a lined tray with parchment paper and drizzle with cooking oil.
  4. Roast in oven at 400 degrees or in air fryer until crispy, approx 15-20 minutes if using an oven. 
  5. Toss in bowl with salt, generous amount of Mala, and finish with a squeeze of lemon or lime juice.
  6. Mix the mayo and Mogambo. In another bowl, mix the sour cream, the remaining Mala, and a squeeze of lemon or lime juice. 
  7. To serve, place the wedges on a plate with bowls of the dips and citrus wedges on the side. 

Make it vegan?: Just use vegan versions of mayonnaise and sour cream.
