Mortadella Sandwich with Hot Honey and Smokey Peanut Cilantro Pesto
Our take on this classic sandwich is a nutty, aromatic pesto, and sweet, spicy hot honey.
Serves 2-4
Prep time: 15 minutes
Ingredients:
- ½ loaf of focaccia (or any other sandwich bread)
- 200g mortadella
- 1 ball (approx 125g) fresh mozzarella or burrata
- 2 tbsp Buzz Hot Honey
- 1 handful fresh cilantro
- 2 tbsp roasted peanuts
- 2 tbsp shelled pistachios
- 4 tbsp olive oil
- 2 tbsp water
- 2 tbsp Boom Spiced Chili Salt
Method:
- Place the cilantro, olive oil, nuts, water and Boom in a blender, and blend until it’s saucy, but not smooth.
- Cut the bread in half, and spread the pesto on the top and bottom. Add the mortadella, and then tear the cheese over the top. Spoon the Buzz on top, cut into portions, and serve.
Notes: This is a great recipe to scale up for a park picnic or potluck: use a full focaccia and cut into bitesize squares.
