Jerk Shrimp Cilantro Rice Bowl

This vibrant bowl features succulent jerk-seasoned shrimp served over fragrant cilantro rice, creating a flavourful, satisfying, quick and easy meal.

Prep time: 15 minutes

Cooking time: 5 minutes

Ingredients: 

  • 5-6 large raw shrimp (shelled)

  • 1 tbsp Zesti Jerk Seasoning

  • 1 cup cooked rice

  • Handful of cilantro (sliced)

  • 4-5 cherry tomatoes 

  • ¼ an english cucumber 

  • 1 tsp cooking oil

Method: 

  1. Toss the Zesti with the shrimp, and set aside while you assemble the rest of the bowl. 

  2. Mix the rice with the cilantro and place in a bowl. Half the tomatoes, dice the cucumber, and place in the bowl. 

  3. Heat a pan over a high heat, and add the oil. We used a grill pan, but a regular grill, or any bottomed pan will work just as well. Cook for 1 minute on each side approx, until just cooked through. Place the shrimp in the bowl, and enjoy. Feel free to add whatever other veggies you like, this is really versatile.
