Mushroom Yaki Udon

Thick, chewy udon noodles tangle with sautéed mushrooms and a glossy Project Yaki glaze for a rich, umami-packed twist on a comfort classic.

Ingredients:

  • 2 portions udon noodles
  • 2 tablespoons butter (or cooking oil)
  • 1 cup mushrooms (any type, we used cremini), sliced
  • 1/2 medium onion, sliced
  • 1/2 cup cabbage, shredded
  • 2-3 green onions, chopped
  • 6 tbsp Project Yaki
  • Pinch of salt

Method: 

  1. Cook udon noodles according to package instructions, drain, and set aside.
  2. Heat a large pan or wok until smoking, and add the butter
  3. Add mushrooms and onion, stir and then allow to brown. 
  4. Add cabbage and season with salt; stir-fry for a 1-2 minutes until the cabbage is just starting to soften. 
  5. Stir in Project Yaki and stir. 
  6. Add cooked udon noodles and green onions; toss to coat evenly.
  7. Garnish with sesame seeds and some extra sliced green onions.
