
Mushroom Yaki Udon
Thick, chewy udon noodles tangle with sautéed mushrooms and a glossy Project Yaki glaze for a rich, umami-packed twist on a comfort classic.

Ingredients:
- 2 portions udon noodles
- 2 tablespoons butter (or cooking oil)
- 1 cup mushrooms (any type, we used cremini), sliced
- 1/2 medium onion, sliced
- 1/2 cup cabbage, shredded
- 2-3 green onions, chopped
- 6 tbsp Project Yaki
- Pinch of salt
Method:
- Cook udon noodles according to package instructions, drain, and set aside.
- Heat a large pan or wok until smoking, and add the butter
- Add mushrooms and onion, stir and then allow to brown.
- Add cabbage and season with salt; stir-fry for a 1-2 minutes until the cabbage is just starting to soften.
- Stir in Project Yaki and stir.
- Add cooked udon noodles and green onions; toss to coat evenly.
- Garnish with sesame seeds and some extra sliced green onions.
