Serves 4
Prep time: 30 minutes
Cooking time: 15 minutes
Ingredients:
- 350g plain flour (plus extra for dusting)
- 7g instant yeast
- 120g natural yogurt
- 150ml warm water
- 5g salt
- 5g sugar
- 3 tbsp cooking oil
- 1 tbsp butter
- Handful of chopped coriander
- 3 tbsp Hakka-ish Chili Crisp (plus extra to finish)
- 250g mozzarella cheese (grated)
Method:
- Mix the warm water, yeast, sugar and yogurt together, and allow to sit for 5 minutes to dissolve the yeast.
- In a bowl, mix the flour, salt, and oil. Add the wet mix, and stir with a wooden spoon until difficult to mix. Turn onto your counter and knead for 5-10 minutes until it forms a smooth ball. Place back into the bowl, cover and allow to rise for approx 2 hours until doubled in size.
- For the filling, mix the cheese and the Hakka-ish. For the topping, melt some butter, and mix with the coriander.
- When the dough is risen, turn out onto a floured counter, and cut into 4 pieces. Flatten the dough with your hands, until around 6 inches wide, and lay ¼ of the cheese mix in the middle. Fold the edges into the middle so it’s totally sealed, and with your hands, flatten until around 8 inches wide. Add more flour as you go to prevent sticking.
- Heat a pan over a med-high heat, and add the naan. Cook for 3-4 minutes on each side, until brown and just starting to char. Repeat with the remaining naans.
- To finish, spread the butter and coriander mix on top, and finish with a little extra Hakka-ish. We served it with a little yogurt on the side, but serve it with anything you like.
