Chili Crunch Cashew Caesar Salad

Out of ideas for healthy recipes for dinner, or just want something you can quickly throw together for lunch? Look no further, this healthier take on a classic Caesar is even tastier, and is ready in 15 minutes or less. This recipe is inspired by Frankie Gaw's version in First Generation

Serves 2

Prep time: 15 minutes

Ingredients: 

  • 2 tbsp cashew paste
  • 1 garlic clove
  • ½ a lemon
  • 1 head of romaine 
  • 4 anchovies (optional)
  • 2 tbsp finely grated parmesan
  • 2 tbsp Hakka-ish Garlic Chili Crunch
  • 1/2 tsp black sesame seeds

Method: 

  1. First, make the dressing. In a blender or mortar and pestle, add the garlic, and crush/puree. Add the anchovies, lemon juice and cashew paste, and combine until smooth. Some lumps is okay, it doesn’t have to be perfectly smooth. Add the parmesan, reserving a little for garnish, and half of the Hakka-ish Crunch. If needed, add a splash of water to make it the consistency of cream. 
  2. Cut the root off the lettuce, separate into leaves, wash and drain. Rub the dressing into the leaves, until they’re evenly coated. 
  3. Place the leaves on plates, and finish with the remaining parmesan and Hakka-ish, and the sesame seeds.

Chefs notes: This makes a great lunch, just chop the lettuce into bite size pieces, and dress just before eating.
