Chili Crunch Smacked Cucumber
Want a quick, refreshing recipe, or just looking up how to cook vermicelli noodles? Look no further, this smacked cucumber recipe is as good as it gets.

Cooking time: 5 minutes
Ingredients:
- 1 cucumber
- 1/2 tsp salt
- 3 tbsp Hakka-ish Garlic Chili Crunch
- 3 tbsp Chinese black vinegar (or any other vinegar)
- 1 green onion (sliced)
- Handful of peanuts (chopped)
- ½ tsp black sesame seeds
- 100g rice vermicelli (optional)
Method:
- Using a heavy bottomed pot or something similar, smack the cucumber until it starts to break, but holds together. Cut into bite size pieces, and place into a bowl. Sprinkle the salt on top, toss to combine, and allow to sit for 10-15 minutes.
- While the cucumber cures, mix the Hakka-ish and vinegar to make the dressing.
- If using the noodles, pour boiling water onto the vermicelli until they’re fully submerged, and allow to cook for 3-4 minutes, drain and rinse with cold water.
- Toss the cucumber with the dressing. To serve, place some noodles on a plate, add some of the smacked cucumber, and top with the peanuts, sesame seeds, and green onions, and spoon over a little extra Hakka-ish.
