Fluffy Souffle Pancakes with Yogurt and Hot Honey

Fluffy and airy pancakes with a hint of spice. This Valentine’s Day breakfast recipe is one you won’t regret.

Serves 2

Cooking time: 5 minutes

Ingredients: 

  • 2 eggs 
  • 25ml milk
  • 30g all purpose flour
  • 2g baking powder
  • 25g sugar
  • 1 tbsp cooking oil
  • 3 tbsp yogurt
  • 3 tbsp Buzz Hot Honey
  • Handful of fresh fruit (optional)

Method: 

  1. Separate the egg yolks from the whites. Whisk the milk and yolks together, and then whisk in the flour until smooth. 
  2. In a separate bowl, whisk the egg whites vigorously. When they start to turn frothy, gradually add the sugar. Whisk until it forms stiff peaks (the mix sticks to the whisk and stands when held up). 
  3. Take around ¼ of the egg white mix, and fold it into the egg yolk and flour mix, until it’s fully combined. This will make it easier to incorporate the rest of the meringue. Add the rest of the meringue, and gently fold together with a spatula until it’s just combined, you want to work it as little as possible. 
  4. Heat a non-stick pan over a medium heat, and add the oil. Add as many pancakes as will fit in the pan without touching. Cook until bubbles start to form on top, and then flip and cook until just cooked through. 1-2 minutes. Repeat until all the pancakes are cooked. 
  5. To serve, spoon the yogurt and Buzz over the pancakes, and finish with fruit if using.
